Amaranth Holiday Bread

 

Ingredients

1 1/3 cups boiling water 

1/2 cup whole grain amaranth

2 large eggs, lightly beaten 

1/4 cup brown sugar

1/4 cup olive oil 

1/4 cup molasses 

240 g (2 cups) white whole wheat flour

2 tsp baking powder 

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon ground nutmeg

1 cup cranberries

 

Instructions

Preheat oven to 350 degrees F. Lightly spray an 8- x 8-inch baking dish with cooking spray; set aside. 

Pour boiling water over amaranth; soak for 15 minutes.

In a small bowl combine eggs, brown sugar, oil and molasses. Combine with soaked amaranth. 

In a large bowl combine flour, baking powder and spices. Add amaranth mixture and mix just until combined; fold in cranberries. Pour into prepared pan and bake at 350 degrees F for 45 minutes.
